Mini Pies are the Perfect Party App for New Year’s and Beyond

New Year’s parties are all about celebrating the new things to come. So why would you serve the same ol’ snacks at one? Your shindig is the perfect time to try a new hors d’oeuvre recipe that’ll set a cheerful tone—this year, we’re all about mini pies. Featuring your choice of filling nestled inside a pastry crust, these festive treats fit all of your favorite nosh-able foods into nifty, hand-held packages.

Here’s the basic method for making them:

  1. Thaw rounds of pie or puff pastry dough (you’ll need two rounds of dough for 5-6 servings).
  2. Preheat oven to 375 degrees F. Using a cookie cutter or small glass, cut dough into circles, each about 2 inches in diameter. Alternatively, drape one dough round over a mini pie mold, like we did.
  3. Place a heaping tablespoon’s worth of filling in the center of half of the circles or inside each space on the mold (see below for filling suggestions).
  4. Place the remaining circles on top the filled ones and seal the edges with your fingers. If using a mold, place a second round of dough on top and roll to seal, then pop out each of the mini pies.
  5. Place the mini pies on a greased baking sheet. (Optional: for a glossy crust, beat together an egg in a small bowl, then brush onto the top crusts of each). Bake in oven until golden brown, 15-20 minutes. Let cool slightly before carefully removing from sheet with a spatula.

There are so many possibilities for how you can fill your pies—sweet, savory, cheesy, fruity, it’s all up to you. We recommend these tasty combinations:

  • Smoked salmon + crème fraiche. Dollop with more crème fraiche and caviar after baking.
  • Spinach artichoke dip + shredded mozzarella. Sprinkle crust with extra cheese halfway through baking.
  • Pizza sauce, shredded mozzarella, pepperoni slices. Sprinkle crust with extra cheese and place another pepperoni slice on top halfway through baking.
  • Diced apples + brown sugar. Sprinkle crust with a coarse sugar, like demerara.
  • Cherry pie filling. Sprinkle crust with a coarse sugar, like demerara.

Once they’re all filled, baked, and done, just spread them on a serving platter and watch them disappear faster than the last moments of 2018. But first, make sure you pick up your ingredients at your local Fairway Market.
