A Recipe From La Preferida Fit For a Fiesta!

2019 is here, which means it’s the perfect time to try something new, like a recipe! Our friends at La Preferida shared their twist on Mexican Stuffed Peppers with us and let’s just say we’re in love. Hearty, hot and full of flavor, it’s just the thing for starting off the year deliciously. With ground beef and rice inside bell peppers smothered by a generous pour of enchilada sauce, you know this dish is going to be supremely satisfying.

Authentic Mexican Stuffed Peppers

Cook Time: 1 hour
Servings: 4


  • 2 x 10 oz. cans La Preferida Enchilada Sauce
  • 1 x 15 oz. can  La Preferida Spanish Rice
  • 1 x 1.25 oz. packet La Preferida Fajita Seasoning
  • 1 lb. ground beef
  • 4 bell peppers
  • 1 clove garlic, minced
  • ½ cup diced onion
  • 2 tbsp. La Preferida Olive Oil


1. Preheat oven to 325 degrees F. In a large skillet, heat olive oil over medium-high heat. Add ground beef, onion, and garlic and cook 3-4 minutes, then stir in fajita seasoning and continue cooking until beef is cooked through and onions are soft, 3-4 minutes more. Carefully drain any excess grease from skillet, then set aside off heat.

2. Cut peppers in half lengthwise, removing stems, seeds and white ribs. Fill each half with with as much rice and beef as desired.

3. Take one can of enchilada sauce and pour it evenly inside a large baking dish. Place filled peppers inside dish, then evenly pour second can of enchilada sauce over peppers. Cover and seal top of dish with aluminum foil. Bake in oven until peppers are very tender, about 45 minutes.
