Holiday Baking: Coffee Fudge Brownies Recipe

‘Tis the season for enjoying lots of delicious, homemade treats!

Baking is one of our favorite things to do during the holidays. But keeping up the cheer all season long can get exhausting, which is why we decided to create these holiday brownies with a kick. This recipe uses coffee for extra rich flavor and a jolt of caffeine that’ll keep you buzzing as bright as Rudolph’s nose. You can even use the leftovers from your morning pot if you choose!

Baking-In-Story

Ingredients:

  • 4 oz butter (1 stick)
  • 1¼ cups flour
  • 1½ cups sugar
  • 1 teaspoon kosher salt
  • ¾ cups cocoa powder
  • 3 eggs, cracked
  • 2 tsp vanilla extract
  • ⅓ cup strongly-brewed Fairway coffee (you can use leftover coffee)
  • ¾ cup chocolate chips or roughly chopped nuts (optional)
  • Powdered sugar for dusting

Directions:

1) Preheat oven to 350 degrees F. Lightly grease a 9- by 9-inch baking pan with cooking spray or butter.

3) Melt butter in the microwave or in a small saucepan. Set aside to cool slightly.

4) Mix together flour, sugar, salt and cocoa powder in a large bowl. In another medium-sized bowl, beat together eggs, melted butter, vanilla and coffee.

5) Pour wet ingredients into dry ingredients. Add chocolate chips or nuts if using. Stir until just combined.

6) Pour mixture into greased pan and spread out evenly. Bake in oven until a toothpick inserted in the center comes out clean, 35-40 minutes.

7) Let cool once done, then dust lightly with cocoa or powdered sugar. Cut into squares before serving. Tip: Use stencils or paper cut outs to dust in a decorative pattern.
