Feast on Fat Tuesday

JambalayaWe love any excuse for a good party. You don’t have to observe Lent or be a New Orleans resident to throw a no-restraints Mardi Gras bash. The theme: indulgence. Could there be a better theme? Absolutely not.

Mardi Gras, or Fat Tuesday, is the final party before most Christians start to celebrate Lent on Ash Wednesday — the all-out blowout party before fasting commences. The Brazilians samba their way through Mardi Gras. Germans and Belgians host fantastic parades. The Italians go all out with masquerade processions, masked balls, pageants, jugglers, magicians, stilt walkers, elegant costumes, opulent masks, fireworks, and fabulous outdoor feasts. And we all know what shenanigans unfold in New Orleans.

I firmly believe all holidays are golden opportunities to celebrate delicious culinary traditions. The Swedes bake semla, a traditional pastry. It’s a cardamom-spiked wheat bun that is scooped out and then filled with bread crumbs, milk and almond paste, topped with whipped cream, and dusted with powdered sugar.

In Louisiana, lavish creole and cajun spreads will be prepared. Gumbo will simmer away, fish will fry, beignets will be showered in powder sugar, and king cakes will get frosted in a jaunty rainbow of frosting. And you don’t have to be in the French Quarter to experience the festivities. Now is the time to whip up some soul-satisfying, party-worthy New Orleans fare. Jambalaya, a distant relative of paella, is a wonderful and immensely flavorful jumble of spicy andouille, veggies, seafood, and rice — and a perfect meal with which to feed a crowd.

In honor of Mardi Gras, make and devour these Bourbon Chicken Drummettes. I’ll be packing this New Orleans-esque sammy for lunch. It’s not the real deal, which involves a marinated olive and veggie salad, but it’s a completely worthy sandwich nevertheless.
