Hanukkah is almost here! For foodies, that can only mean one thing: LATKES. And lots of them. These potato pancakes are a traditional holiday food because they’re fried in oil, which symbolizes the miracle of the menorah that stayed lit for eight nights. But you don’t have to be steeped in tradition to know that they’re tasty. You don’t have to stick to tradition, either: this recipe from Rayna Greenberg of One Hungry Jew is not your bubbe’s but it’s definitely brilliant. It adds vitamin A-rich sweet potatoes to the mix (hello nutritious and delicious). Plus, there’s a pinch of cayenne pepper to kick things up a notch.

We caught up with Rayna recently and asked her to show us how she makes her amazing latkes.
