Fairway Superfood Quinoa with Red Grapes & Cucumber with Squash, Peppers, Radishes and Goat Cheese

Prep Time: 5 minutes Cook Time: 15 minutes; Serves: 4 people

Ingredients:

  • 1 package of Fairway Superfood Quinoa with Red Grapes & Cucumber
  • 1 squash
  • 2 small radishes
  • 2 orange bell peppers
  • 2 scallions, white and green parts thinly slices
  • 4 oz goat cheese
  • 2 tbsps grapeseed oil or olive oil

Directions:

  1. Slice the squash and peppers into slightly larger than bite size pieces. Heat oil over medium heat in a small sauté pan; cook until slightly browned, about 5-10 minutes.
  2. Add the Fairway Superfood mix and cook for about 2-3 minutes.
  3. Transfer to plates, garnish with sliced radishes and scallions. Season with salt and pepper to taste and a dollop of goat cheese. Serve immediately.
