Ingredients. Our reason for being has been for cooks. For ALL cooks — the best cook, the striving cook, the aspiring cook, the professional cooks who call themselves CHEFS, the least-experienced cook, the well-traveled cook, the teaching cook. We know NO cook is going to be the best he or she can be unless they start with the finest ingredients. And not just SOME OF THEM. ALL OF THEM. All of the herbs and spices any recipe may call for. All of the imported ingredients that make or break so many recipes. In-season fruits and vegetables, and out-of-season fruits and vegetables. Hard-to-find cuts of meat, game, poultry, foie gras, duck fat. Rare nut and seed oils. Rare and inimitable vinegars. Here, in ON OUR PLATE, we will try to share the best of them with you.
Delicious. Not a month goes by that we don’t latch onto several foodstuffs we find in our stores that absolutely delight us, and that insist and compel us to take them home and use them in ways that interest us.
Essentials. And then there are things that have become essential. Things we cannot get through the week without, and therefore you, too, have got to have them. Black mulberry juice, for instance. Just a splash with seltzer and a lot of ice in your favorite glass is a great way to unwind and makes arriving home a special event. Or take Kumato® tomatoes. They have become SO much a part of our lives that we cannot imagine being without them.
